10 No-Bake Christmas Desserts (Showstoppers, Zero Oven)

December is the one month when your oven is booked solid — roasts, cookies, reheated everything — and yet the dessert table is the thing everyone photographs. That's exactly why no-bake Christmas desserts are trending hard this year: search interest in 'no-bake holiday desserts' climbs every December, and the best ones look like they took all afternoon while quietly setting in the fridge. No preheating, no baking timers, no fighting for oven space on the big day.

This list is built for real December kitchens. Every recipe is complete, with real quantities and a proper method, and almost all of them can be made a day or two ahead — which means on Christmas Day you just slice, unmould and take the compliments. Pick two for the table, gift a few in tins, and keep the peppermint bark for yourself.

1. Layered Peppermint Bark

Prep: 15 minutes · Cook: Chill: 1 hour · Serves: 8 (about 24 shards)

Ingredients

  • 340 g (12 oz) dark chocolate (60–70%), chopped
  • 340 g (12 oz) white chocolate, chopped
  • ½ tsp peppermint extract
  • 6 candy canes (about 90 g / 3 oz), crushed into small pieces

Method

  1. Line a 23 × 33 cm (9 × 13 in) tray with baking paper, leaving an overhang.
  2. Melt the dark chocolate in a heatproof bowl over simmering water (or in 30-second microwave bursts), stirring until smooth. Spread it evenly over the tray and chill 15 minutes, until just set but not rock hard.
  3. Melt the white chocolate the same way, stir in the peppermint extract, and let it cool 2 minutes so it doesn't melt the layer beneath.
  4. Spread the white chocolate over the dark layer, scatter the crushed candy canes on top and press very gently.
  5. Chill 45 minutes until firm, then lift out and snap or cut into shards. Keeps 2 weeks in an airtight tin.

2. 5-Minute Christmas Fudge

Prep: 5 minutes · Cook: Chill: 2 hours · Serves: 16 squares

Ingredients

  • 397 g (14 oz) tin sweetened condensed milk
  • 450 g (3 cups) dark or semi-sweet chocolate chips
  • 30 g (2 tbsp) butter, plus extra for the tin
  • 1 tsp vanilla extract
  • Pinch of fine sea salt
  • 60 g (½ cup) red and green sprinkles or chopped glacé cherries

Method

  1. Line a 20 cm (8 in) square tin with baking paper and lightly butter it.
  2. Put the condensed milk, chocolate chips and butter in a large microwave-safe bowl. Microwave in 30-second bursts, stirring each time, until completely melted and glossy — about 2 minutes total.
  3. Stir in the vanilla and salt until the mixture is thick and smooth.
  4. Scrape into the tin, level the top and scatter the sprinkles or cherries over, pressing lightly.
  5. Chill at least 2 hours, then cut into 16 squares with a warm knife.

3. Chocolate Truffles, 3 Coatings

Prep: 25 minutes · Cook: Chill: 2 hours · Serves: 20 truffles

Ingredients

  • 300 g (10½ oz) dark chocolate (70%), finely chopped
  • 180 ml (¾ cup) double cream (heavy cream)
  • 25 g (2 tbsp) butter, at room temperature
  • 2 tbsp cocoa powder, for coating
  • 2 candy canes, finely crushed, for coating
  • 40 g (⅓ cup) pistachios, finely chopped, for coating

Method

  1. Put the chopped chocolate in a heatproof bowl. Heat the cream in a small pan until it just begins to simmer at the edges — do not boil.
  2. Pour the hot cream over the chocolate, rest 2 minutes, then stir from the centre outward until you have a smooth, glossy ganache. Stir in the butter until melted.
  3. Cover and chill 2 hours, until firm enough to scoop.
  4. Roll teaspoonfuls into balls (dust your hands with cocoa if sticky) and place on a lined tray.
  5. Roll a third of the truffles in cocoa, a third in crushed candy cane and a third in pistachios. Chill 30 minutes before serving.

4. Peanut Butter Snowballs

Prep: 20 minutes · Cook: Chill: 1 hour · Serves: 24 balls

Ingredients

  • 250 g (1 cup) smooth peanut butter
  • 60 g (¼ cup) butter, softened
  • 200 g (1⅔ cups) icing sugar (confectioners' sugar), sifted
  • 1 tsp vanilla extract
  • 280 g (10 oz) white chocolate, chopped
  • 50 g (⅔ cup) desiccated coconut, for rolling

Method

  1. Beat the peanut butter, butter, icing sugar and vanilla together until a stiff, rollable dough forms. If it is soft, chill 15 minutes.
  2. Roll into balls about 2.5 cm (1 in) wide and set on a lined tray. Chill 30 minutes until firm.
  3. Melt the white chocolate in a heatproof bowl over simmering water, stirring until smooth.
  4. Dip each ball in the white chocolate with a fork, let the excess drip off, then roll in the desiccated coconut.
  5. Return to the tray and chill 30 minutes until the coating sets. Store in the fridge for up to a week.

5. Church Window Cookies

Prep: 15 minutes · Cook: Chill: 3 hours (or overnight) · Serves: 24 slices

Ingredients

  • 340 g (12 oz) semi-sweet chocolate chips
  • 60 g (¼ cup) butter
  • 240 g (4 cups) coloured mini marshmallows
  • 1 tsp vanilla extract
  • 40 g (½ cup) desiccated coconut or extra icing sugar, for the outside

Method

  1. Melt the chocolate chips and butter together in a large pan over the lowest heat, stirring constantly, until smooth. Take off the heat and cool 10 minutes — hot chocolate will melt the marshmallows and ruin the 'stained glass'.
  2. Stir in the vanilla, then fold in the mini marshmallows until every one is coated.
  3. Scatter the coconut over a large sheet of cling film. Spoon the mixture along the centre and roll it into a firm log about 5 cm (2 in) thick, twisting the ends to seal.
  4. Chill at least 3 hours, ideally overnight, until completely firm.
  5. Unwrap and slice into 1 cm (½ in) rounds with a sharp knife so the coloured 'windows' show.

6. No-Bake Cranberry Cheesecake Jars

Prep: 20 minutes · Cook: Chill: 2 hours · Serves: 6 jars

Ingredients

  • 150 g (1½ cups) digestive biscuit (graham cracker) crumbs
  • 60 g (¼ cup) butter, melted
  • 400 g (14 oz) cream cheese, at room temperature
  • 240 ml (1 cup) double cream (heavy cream)
  • 80 g (⅔ cup) icing sugar (confectioners' sugar), sifted
  • 1 tsp vanilla extract, finely grated zest of 1 orange
  • 200 g (¾ cup) cranberry sauce (whole-berry), plus 6 whole cranberries to finish, if liked

Method

  1. Stir the biscuit crumbs and melted butter together, divide between 6 small jars or glasses and press down lightly. Chill while you make the filling.
  2. Beat the cream cheese, icing sugar, vanilla and orange zest until smooth.
  3. Whip the double cream to soft peaks and fold it gently through the cream cheese mixture until no streaks remain.
  4. Spoon or pipe the filling over the bases and smooth the tops.
  5. Spoon cranberry sauce over each jar, swirl lightly with a skewer, top with a cranberry if using, and chill at least 2 hours.

7. Rocky Road Christmas Slice

Prep: 15 minutes · Cook: Chill: 2 hours · Serves: 16 squares

Ingredients

  • 400 g (14 oz) milk or dark chocolate, chopped

  • 200 g (2 cups) digestive biscuits (graham crackers), broken into chunks
  • 150 g (2½ cups) mini marshmallows
  • 80 g (½ cup) red and green glacé cherries or gumdrops, halved
  • 60 g (½ cup) pistachios, roughly chopped
  • Icing sugar, for dusting

Method

  1. Line a 20 cm (8 in) square tin with baking paper.
  2. Melt the chocolate, butter and golden syrup together in a large pan over low heat, stirring until smooth. Cool 5 minutes.
  3. Fold in the biscuit chunks, marshmallows, cherries and most of the pistachios until everything is coated.
  4. Tip into the tin, press down firmly with the back of a spoon and scatter the remaining pistachios on top.
  5. Chill at least 2 hours until set solid, dust with icing sugar like snow, then cut into 16 squares.

8. Oreo Truffle Ornaments

Prep: 25 minutes · Cook: Chill: 1 hour · Serves: 18 ornaments

Ingredients

  • 36 Oreo cookies (396 g / 14 oz), including the filling
  • 200 g (7 oz) cream cheese, softened
  • 340 g (12 oz) white chocolate or white candy melts, chopped
  • 18 mini peanut butter cups, for the ornament caps
  • Red and green sprinkles, for decorating

Method

  1. Blitz the Oreos to fine crumbs in a food processor (or crush in a sealed bag with a rolling pin). Mix with the cream cheese until a firm dough forms.
  2. Roll into 18 balls, place on a lined tray and chill 30 minutes until firm.
  3. Melt the white chocolate until smooth. Dip each ball, let the excess drip off, and return to the tray.
  4. While the coating is still wet, add sprinkles and press a mini peanut butter cup, flat side down, on top of each ball as the ornament cap.
  5. Chill 30 minutes until set. Serve on a platter — they look like a tray of baubles.

9. Icebox Yule Log

Prep: 20 minutes · Cook: Chill: 6 hours (or overnight) · Serves: 8 slices

Ingredients

  • 600 ml (2½ cups) double cream (heavy cream), cold
  • 60 g (½ cup) icing sugar (confectioners' sugar), sifted
  • 60 g (½ cup) cocoa powder, sifted, plus extra for dusting
  • 1 tsp vanilla extract
  • About 40 thin chocolate wafer biscuits (roughly 2 packs, 250 g / 9 oz)
  • Chocolate shavings and a few cranberries, to decorate

Method

  1. Whip the cream, icing sugar, cocoa and vanilla together to firm peaks — this is your chocolate 'bark' cream.
  2. Spread a thin line of cream down the centre of a serving plate to anchor the log.
  3. Spread a little cream on a wafer, top with another wafer, and keep stacking and spreading to build a long log lying on the plate, using cream between every biscuit.
  4. Cover the whole log with the remaining cream, then drag a fork along it to make bark-like ridges.
  5. Chill at least 6 hours, ideally overnight, until the wafers soften into cake-like layers. Dust with cocoa, decorate, and slice on a diagonal.

10. Peppermint Ice Cream Pie

Prep: 15 minutes · Cook: Freeze: 4 hours · Serves: 8 slices

Ingredients

  • 250 g (2½ cups) Oreo crumbs (about 24 cookies)
  • 70 g (5 tbsp) butter, melted
  • 1 litre (about 4 cups) peppermint or mint chocolate chip ice cream
  • 200 ml (¾ cup + 2 tbsp) double cream (heavy cream)
  • 2 tbsp icing sugar (confectioners' sugar)
  • 3 candy canes, crushed, plus chocolate sauce, to serve

Method

  1. Stir the Oreo crumbs and melted butter together and press firmly into a 23 cm (9 in) pie dish, base and sides. Freeze 15 minutes.
  2. Let the ice cream soften at room temperature for 10 minutes until spreadable but not melted.
  3. Spread the ice cream evenly over the frozen crust and smooth the top. Freeze at least 4 hours, until solid.
  4. Whip the cream and icing sugar to soft peaks and pile or pipe it over the pie.
  5. Scatter with crushed candy canes, drizzle with chocolate sauce and serve straight from the freezer, slicing with a hot knife.

The Bottom Line

No oven, no stress, no sad dessert table. The bark, fudge, church windows and rocky road all keep for days (the fudge and bark for weeks), the jars and truffles are make-ahead friendly, and the icebox log and ice cream pie actually improve overnight. Make two this weekend, tin a couple up as gifts, and spend Christmas Day out of the kitchen — which is where the real celebration happens anyway.
