Gingerbread Everything: 8 Recipes Beyond the Cookie

Gingerbread is having a serious moment. The flavour that used to mean one plate of iced biscuits now shows up in lattes, cheesecakes, fudge and even granola — gingerbread-everything content climbs every single December, and for good reason. That warm blend of ginger, cinnamon, cloves and dark molasses tastes like Christmas in a way almost nothing else does, and it turns out to be one of the most flexible flavours in the whole festive kitchen.

So this list goes well beyond the cookie. Inside you'll find a baked cheesecake on a ginger biscuit base, a café-style latte you can make in five minutes, truffles, fudge, pancakes for Christmas morning and a crème brûlée with a spiced twist — eight complete recipes, all built on the same store-cupboard spice blend. Make the spice mix once and work your way through the whole list.

1. Gingerbread Cheesecake

Prep: 25 minutes · Cook: 55 minutes, plus chilling · Serves: 10 slices

Ingredients

  • 250 g (2½ cups) ginger biscuit (gingersnap) crumbs
  • 80 g (⅓ cup) butter, melted
  • 675 g (24 oz) cream cheese, at room temperature
  • 200 g (1 cup) dark brown sugar
  • 120 ml (½ cup) molasses (treacle)
  • 3 eggs, at room temperature
  • 2 tsp ground ginger, 1½ tsp ground cinnamon, ¼ tsp ground cloves
  • 1 tsp vanilla extract
  • Whipped cream and mini gingerbread cookies, to serve

Method

  1. Heat the oven to 170°C / 325°F. Mix the crumbs and butter, press into a 23 cm (9 in) springform tin and bake 10 minutes. Cool.
  2. Beat the cream cheese and brown sugar until completely smooth. Beat in the molasses, spices and vanilla.
  3. Add the eggs one at a time, mixing on low just until combined — over-mixing causes cracks.
  4. Pour over the base and bake 45 minutes, until the edges are set and the centre still wobbles slightly.
  5. Turn the oven off, leave the door ajar and let the cheesecake cool inside for 1 hour. Chill at least 4 hours, then top with whipped cream and mini cookies.

  2. Take off the heat and stir in the vanilla.
  3. Froth with a milk frother or whisk vigorously until foamy.
  4. Divide the hot coffee between two mugs and pour the spiced milk over the top.

  4. Spread in an even layer and bake 28–30 minutes, stirring once halfway, until golden and smelling toasted.
  5. Cool completely on the tray — it crisps as it cools — then stir in the cranberries. Store in a jar for up to 3 weeks.

The Bottom Line

One spice blend, eight very different desserts. The cheesecake and crème brûlée cover the showpiece slot, the latte and pancakes own Christmas morning, and the truffles, fudge and granola are the ones to bag up as gifts. If you only make one, make the cake — then eat a square of it with the latte, and you'll understand exactly why gingerbread-everything refuses to stay a trend.
