Viral Baked Oats: One Base, 7 Ways

Baked oats went viral for a reason: they taste like cake, eat like breakfast, and take five minutes to assemble. The trick is one base that never changes, then seven flavour directions that only swap the mix-ins. Blend it, bake it, eat it warm from the ramekin — or bake a batch on Sunday and reheat all week.

The Base (Serves 1–2)

Prep: 5 min · Bake: 20–25 min · Makes: 1 large ramekin or 2 small ones

Ingredients: ½ cup rolled oats · ½ ripe banana · 1 egg · ¼ cup milk · 1 tbsp maple syrup or honey · ½ tsp baking powder · pinch of salt

Method:

  1. Put everything in a blender and blend until smooth, about 30 seconds.
  2. Pour into a greased ramekin or oven-safe dish.
  3. Bake at 350°F (175°C) for 20–25 minutes, until set in the middle and lightly golden on top. Rest 5 minutes before eating.
  4. For each variation below, add the variation ingredients to the blender (or fold/stir them in after blending, as noted) and bake exactly the same way.

1. Chocolate Chip Cookie

Extra ingredients: 2 tbsp chocolate chips · ½ tsp vanilla · pinch of flaky salt, to top

Method:

  1. Blend the base with the vanilla, then fold in most of the chocolate chips.
  2. Scatter the rest on top with the flaky salt and bake as above. The top goes crisp while the middle stays soft, like a cookie centre.

2. Blueberry Lemon

Extra ingredients: ¼ cup blueberries · 1 tsp lemon zest · 1 tbsp lemon juice

Method:

  1. Blend the base with the lemon zest and juice.
  2. Fold in the blueberries (keep a few for the top) and bake as above. The berries burst and turn the crumb purple-blue in spots.

3. Apple Cinnamon

Extra ingredients: ¼ cup diced apple · ½ tsp cinnamon · 1 tbsp brown sugar

Method:

  1. Blend the base with the cinnamon and brown sugar.
  2. Fold in the diced apple and bake as above. Serve with a spoonful of yogurt and an extra dusting of cinnamon.

4. Peanut Butter Banana

Extra ingredients: 1 tbsp peanut butter · extra banana slices, to top

Method:

  1. Blend the base with the peanut butter (use the full banana in the base for this one).
  2. Top with banana slices and bake as above. Drizzle with more peanut butter before serving.

5. Carrot Cake

Extra ingredients: ¼ tsp cinnamon · pinch of nutmeg · ¼ cup grated carrot · 1 tbsp raisins · 1 tbsp cream cheese, to dollop

Method:

  1. Blend the base with the cinnamon and nutmeg.
  2. Fold in the carrot and raisins, bake as above, and dollop with cream cheese while warm so it melts slightly into the top.

6. Strawberry Cheesecake

Extra ingredients: ¼ cup chopped strawberries · 2 tbsp cream cheese, cubed

Method:

  1. Blend the base, then fold in the strawberries.
  2. Press the cream cheese cubes into the top before baking. They bake into soft, tangy pockets — the cheesecake effect without a crust.

7. Double Chocolate

Extra ingredients: 1 tbsp cocoa powder · 2 tbsp chocolate chips

Method:

  1. Blend the base with the cocoa powder (add a splash more milk if the batter looks thick).
  2. Fold in the chocolate chips and bake as above. Eat warm, when the chips are still molten.

Make-Ahead and Storage

  • Bake in individual ramekins, cool completely, cover and refrigerate for up to 4 days. Reheat 60–90 seconds in the microwave.
  • Baked oats also freeze well for a month: thaw overnight in the fridge, then reheat.
  • No banana? Replace it with ¼ cup applesauce or 2 tablespoons of yogurt — the bake still sets, just slightly less sweet.

The Bottom Line

One blender, one base, seven breakfasts that taste like dessert. Start with chocolate chip cookie or blueberry lemon — they are the two that made the trend — and keep the base ratio written on the fridge: oats, banana, egg, milk, sweetener, baking powder.
